Gingerbread (from Joy of Cooking)

Preheat oven to 350 degrees. Melt in a heavy pan and cool:

1/2 c butter

Ad and beat well:

1/2 c sugar
1 egg

In another bowl sift together:

2 1/2 c sifted all-purpose flour
1 1/2 teaspoons baking soda
1 teaspoon each cinnamon and ginger (I double this)

In a third bowl combine:

1/2 c molasses (Joy calls for light molasses, I use the darkest possible)
1/2 c honey
1 c hot water
(optional: 1 tablespoon grated orange rind)

Add sifted and liquid ingredients alternately to the butter mixture until blended. It is by adding the ingredients gradually and mixing thoroughly before adding the next bit that the gingerbread gets so moist.

Bake in a greased 9" x 9" x 2" pan about one hour until an inserted skewer comes out clean.
