Pear Mini-Muffins

18 oz. baby food pears (or 1 1/2 cup equivalent of any fruit)
1/4 cup oil (I use canola)
3/4 cup sugar
1 1/2 tsp baking soda
1 tsp salt
1 1/2 cup white rice flour
3/4 cup oat flour
Mix pears, oil, and sugar well. Sift remaining ingredients and stir in. Mix well
(do not beat). Put into mini-muffin pans and bake @ 350 degrees (325 if using dark
pans) for about 12 to 15 minutes or until toothpick comes out clean. Makes 3 to 4 dozen
**My second batch rose better so I would recommend letting it sit for 15 or 20 min
before putting into muffin pans.
They tasted pretty good, although they can be rather grainy. The boy eats them just
as well as he did when I used wheat flour. I change the sugar based on the fruit.
